This easy recipe requires little effort to pull together and even fewer dishes! I made this recipe because I was in need of an easier way to enjoy stuffed cabbage rolls without all the fuss. Just one skillet to brown the Beyond Beef and simmer the tomato sauce, then one casserole dish to bake. The fragrant onions and garlic really zing once the white wine vinegar is added to deglaze the pan. I added some dried dill upon serving, creating another layer of flavor with ease.
A Little About The Recipe
To keep this recipe more traditional, I replaced the beef and pork normally included in a cabbage casserole with a store-bought meat alternative. I love Beyond Meat brand products and have used their line of meat alternatives in so many of my recipes. Beyond Beef has the smokey, juicy flavor of real beef and cooks up just like the real thing.
I have also tried this recipe with TVP (textured vegetable protein) and red kidney beans replacing the meat alternative altogether. Either of those swaps is a great way to round out the flavor and keep the protein count high.
Beyond Beef n' Cabbage Casserole
Prep time: 30 mins. Cook time: 1 hour Serves: 6 - 8
Ingredients:
For the tomato sauce:
1 Tb. vegetable oil
1 medium onion chopped
3 cloves garlic minced
2 Tb. white wine vinegar
1 - 15oz. can crushed tomatoes
salt and pepper to taste
For the rest of the casserole:
1lb. Beyond Meat Beef
1 medium head of cabbage (about 8 cups chopped)
1 c. uncooked rice
3.5 c. vegetable broth (plus more as needed)
Dill (optional to add as a topping)
Instructions:
Preheat oven to 350 F.
1. Brown the Beyond Beef
In a skillet over medium/high heat, brown the Beyond Beef, breaking into small crumbles.
Set aside.
2. Make Tomato Sauce
In the same skillet, sauté onions in olive oil for 3-4 minutes until translucent and soft.
Add finely chopped garlic and continue to sauté for 1 minute until fragrant.
Deglaze the pan by pouring white wine vinegar into the skillet with the onions and garlic; stirring up the browned bits from the bottom.
Add crushed tomatoes and allow to simmer for 5-10 minutes.
3. Prepare Casserole
In the bottom of a casserole dish add uncooked rice, vegetable broth, and tomato sauce.
Add chopped cabbage and Beyond Beef crumbles on top of the rice and broth mixture.
3. Bake
Bake uncovered for 1 hour, stirring periodically to mix the casserole ingredients as the rice cooks.
Add additional broth 1 c. at a time if rice is not fully cooked before all liquid is absorbed.
4. Serve
Top casserole with fresh or dried dill (optional)
